Crown’s 2016 Food & Beverage Stars National Showcase Event - Wednesday 15 June

Gastrology recently attended Crown's 2016 Food & Beverage Stars National Showcase Event. 

The evening celebrated Crown's Perth and Melbourne culinary chefs and Cocktail makers who made it through a "Culinary Cook Off" in their respective States. 

The night provided the winners with the opportunity to showcase their award winning dishes
and beverages. 

On the night, we tasted:

  • Quail breast with corn puree and berry vinaigrette & Lamb backstrap wrapped in filo from Calvin White (No.8 Crown Melbourne Apprentice Chef) 
  • Beef tartare with rice crisp & duck croquette from Aram Yun (No.8 Crown Melbourne Commis Chef) 
  • Chicken Ballintine with crispy duck skin, roasted cauliflower and honey glazed sweet potato & Scallops with barramundi, smoke bacon, plum puree, fennel, apple and dill from Angela Fairfield (Market & Co Crown Perth Apprentice Chef) 
  • Duck breast with vegetables & salmon with fried salmon skin from Indika Nuwan (Carvers Crown Perth Sous Chef).

Each of the dishes were superb and showcased Crown's culinary capabilities.

The Food & Beverage Stars program allows Crown's employees with the chance to develop their skills and expand their network whilst also providing them with a platform to demonstrate and cook their signature dishes.
