/GEMMA Steakhouse is the brainchild of Michelin Chef-Restaurateur Beppe De Vito and delivers an upscale social dining destination with a vibe-driven focus that redefines fine dining.
Nestled in the stately surrounds of National Gallery Singapore, GEMMA serves contemporary Italian cuisine alongside an impressive beverage menu within a stunning 68-seater restaurant brilliantly illuminated in the rich hues of polished brass and terracotta red.
Inspired by the best of Mediterranean summertime steakhouses - where everyone gathers to revel in the happiness of the season in high spirits, GEMMA is a vibrant celebration of everyday occasions and life’s greatest pleasures through food and drinks.
The cuisine is spearheaded by Group Executive Chef Daniele Sperindio. With a culinary pedigree that includes award-winning destinations such as Tippling Club, Alinea, Fat Duck and Narisawa, Chef Daniele presents a menu that is a fine showcase of innovative techniques and opulent ingredients.
We loved tasting our way through the menu. To start, the Challans Duck Prosciutto was a thing of beauty. Unsurprising given the restaurant has an in-house curing room housing some exquisitely aged cuts.
The dish of pulled snow crab, marie rose, green apple and mustard seeds to follow was similarly delightful. An elegant and fresh opener that did wonders to whet our appetites for the heartier courses to follow.
Artisanal and housemade pasta adds to the variety. The spaghetti ‘Monograno Felicetti’ cacio e pepe is truly beautiful. Simple yet difficult to master, we loved GEMMA’s take on this timeless Roman classic elevated by Italy’s highest quality pasta made from organic grains.
For mains the T-Bone Fiorentina Steak was excellent, making full use of the jewel of the kitchen - the trademark Josper oven. Our hunk of Tuscan-style Bistecca Fiorentina was beautifully seared and then prepared before our very eyes, adding theatre and a sense of excitement.
Dessert time continued to please at GEMMA. The Pistachio Marzipan Soufflé served with heady Grappa Custard and Moka Ganache was picture perfect with textbook execution. It was the perfect way to round off an excellent meal.
On the drinks front, GEMMA offers inventive cocktails served stylishly tableside from cocktail carts as well as an extensive wine list
Which boasts arguably one of the city’s best collections of Italian and French wine, such as Barolo, Brunello, Super Tuscans and Burgundy, and also organic and biodynamic wines from both the old and new world regions.
