Kuma Japanese Restaurant has undergone extensive renovations, now offering a brand-new dining environment consisting of 1930s Shanghai-inspired decor and architectural design. Kuma is an ideal Japanese restaurant for groups, date nights and for when you want a dining experience that’s a bit fancier.At the helm is Executive Chef Federico Padayao who has extensive experience in the Asian culinary space and, prior to joining Doxa, was head chef at Ichini Nana in Fitzroy.
We loved tasting our way through Kuma’s stunning menu. Highlights included the salmon nigiri was expertly crafted and the plump, slices of salmon beggared belief - they were some of the most delicious we have encountered, ever. It is clear that Kuma is using only the freshest, highest quality seafood.
The soft-shell crab and prawn tempura was similarly delicious. A commendable modern rendition of a traditional Japanese dish, the batter was ethereally light and crispy. The prawn and soft-shell crab which sat within the batter was fresh and most memorable.
Another standout was the amazing surf and turf which features beautifully cooked lobster and duck. Think perfectly cooked juicy morsels of lobster and delicate slices of duck, served with sauces and various accompaniments.
For dessert, the matcha tiramisu was a lovely Japanese inspired dessert - An exemplary display of Kuma’s versatility.
Kuma exceeds expectations. Using traditional Japanese ingredients and techniques as the base, each dish on the menu is made Kuma’s own with unique flavours and textures. Whether dropping in for cocktails, or settling back with friends for the evening, it’s a fresh experience for guests to savour.
What is even more interesting is the fact that Kuma is an initiative of Doxa community Club, an organisation that donates all profits to charity. Profits from all Doxa venues including Kuma assist Doxa Youth Foundation to extend opportunities for all children and young people to create special memories and build brighter futures. Doxa Youth Foundation provides programs which offer positive life experiences, education opportunities and employment pathways to students from disadvantaged backgrounds and schools across Victoria.
