Middle Brighton Baths
/Enjoying one of the most breathtaking views of any restaurant in Melbourne, the Middle Brighton Baths has relaunched after an interior refresh of its upstairs dining space, led by respected hospitality creative, Wendy Bergman.
The redesign complements the Bayside venue’s stunning 180 degree vistas and seaside theme, through blue toned walls and a quirky yet practical cork floor, while retaining some of the sweeping space’s original charm.
Positioned above Port Phillip Bay, the venue’s floor-to-ceiling windows remain, allowing clear vision all the way to the CBD skyline, and, at the opposite end, a glimpse of Brighton’s famous multi-coloured beach boxes.
Under the expert guidance of owner and chef, Paul Raynor, the menu in the upstairs restaurant offers a tempting selection of dishes with a strong seafood focus, sourced daily from the best local suppliers available. Training for many years at Stokehouse and Michelin star restaurant Le Gavroche, Raynor built a reputation within the hospitality community and has amassed a wide array of contacts from whom he is able to source top-quality produce.
We loved tasting our way through the menu.
To start the Garfish was absolutely stunning and some of the best we have tried in Melbourne. The fish was wonderfully fresh and had been cooked to absolute perfection. We loved the accompaniments of pickled plum, fried bamboo mushrooms and black radish.
Similarly delicious was the Twice cooked pork belly served with caramelised apple and ginger puree and calvados jus. The slice of pork belly was stunning. The pork was moist on the underside and contained the perfect amount of unctuous fat, encased in a crisp outer crust of crackling. Each bite was gratifying.
We were also particularly pleased with our entrée of Carpaccio of heirloom beetroots, goat's cheese, baby beetroot salad as it had perfectly balanced flavours. The combination of luxurious goat’s cheese with the slight acidity and earthiness from the beetroot all came together beautifully.
For mains the Roasted barramundi fillet served with beautiful green asparagus and creamy morel veloute was a showstopper. The quality of the barramundi was exemplary. The skin of the fish was perfectly seared to be very crisp while the flesh was delicate and moist. It was a dish that allowed the natural subtle sweetness of the fish to be enjoyed.
Another favourite was the ox cheek which was delectably tender and delicious, with caramel undertones courtesy of being slow-braised. The cheeks fell away at the weight of our spoons whilst still retaining their integrity. The mash and hearty bordelaise sauce were the perfect accompaniments.
Whatever you do, save room for dessert and indulge in the pear tarte tatin - think sweet fruit over a comforting blanket of gloriously sticky sweet toffee and melt-in-your-mouth pastry finished with ice cream. Simply lovely.
With stunning views, a delicious menu and great service, the Middle Brighton Baths offers a compelling proposition to suit a range of experiences - perfect for a quiet drink on the balcony, a decadent three course meal, and everything in between.
