Po Restaurant
/Po Restaurant stuns guests with a modern and elegant interpretation of humble local classics. The flavours are reminiscent of good you would enjoy at a typical Singaporean household or at hawker centres but executed using modern techniques with precision and finessed.
The restaurant is ideally located on the bank of Singapore’s Robertson Quay, and is the flagship restaurant of The Warehouse Hotel.
The restaurant was launched in collaboration with award-winning Chef-Partner Willin Lowin of Wild Rocket. As an avid pioneer of Mod-Sin cuisine ,Chef Low’s focus at Po has always been to celebrate Singapore’s flavours, enhancing local classics with premium ingredients and ensuring the highest level of quality by making many elements from scratch.
The kitchen is now run by Chef Ken Zheng, a familiar face in the local F&B scene who brings to Po his unique culinary perspective from his own hawker business, as well as his extensive experience across some of the island’s most prestigious hotel establishments.
We loved tasting our way through the menu.
The popiah was outstanding - A signature item on the menu which is crafted from a home recipe and perfected with effort unparalleled by other establishments in Singapore. From finding the perfect thickness for the hand-cut vegetables to the 4-hour long braising process to ensure the filling attains the right balance of savoury-sweetness, the popiah at Po honours tradition while enhancing it with fastidious attention to detail. Simply delicious!
The Barramundi Salad is similarly delicious. A dish inspired by the local Yu Sheng (Prosperity Raw Fish Salad), this is a scrumptiously tangy and spicy interpretation featuring locally farmed raw barramundi.
For something heartier, the Carabinero Prawns & Konbu Mee is an absolute must-have. An umami-laden interpretation of the Singaporean Hokkien Mee. This dish packs in charcoal-grilled prawns, pork belly, Red Boat fish sauce, lardons and sakura ebi. With the addition of heady sambal, this dish is simply mesmerising.
In terms of libations, Po also has you sorted with a stunning cocktail menu made by the talented mixologist at The Warehouse Hotel’s Lobby Bar. The cocktail list celebrates three key eras of the property’s past – from spice warehouse to godown, and eventually disco. The Open Sesame is a must-try –an interpretation of the perennial favourite Negroni with sesame scotch, pandan Montenegro and sweet vermouth served in a tall stem glass.
