Seafood Yum Cha Dinner at The Roving Marrow
/Sydney young gun Josh Niland of Fratelli's cafe Nice recently made his first appearance at Melbourne's The Roving Marrow for a one-night-only roving Seafood Yum Cha Dinner on Tuesday 3 May, as part of the Australian Financial Review Australia’s Top Restaurants dining program.
Having previously worked in the highly acclaimed kitchens of The Fat Duck, est. Restaurant, Glass Brasserie and Fish Face, Josh believes that diner enjoyment is of paramount importance and creates food that is generous, delicious and refined. We loved indulging in the Seafood Yum Cha Dinner where Josh showcased the beautiful produce on offer in Australia with a particular focus on fish.
Our favourite starter was the dish of John Dory roe tarama. We loved the pleasing chunky texture and the tender morsels of fish which showcased wonderfully balanced flavours.
For mains, the ocean trout with wild fennel branches was a showstopper. The quality of the ocean trout was exemplary. The fish was perfectly cooked boasting exceedingly delicate and moist flesh. It was a dish that allowed the natural subtle sweetness of the fish to be enjoyed.
Another highlight was the bouillabaisse which boasted a decadent depth of flavour. A memorable side dish of tomato and nori roasted in salted meringue was one of many other innovative creations.
The 12 course dinner was an exciting opportunity to experience cooking from a truly talented and passionate chef.
