Harry's Ice Cream Factory Tour

Award-winning Australian ice cream maker Harry’s Ice Cream opened its factory doors for an exclusive experience where guests got up-close and personal with the artisan ice cream makers and were also given the opportunity to create their very own bespoke ice cream flavour to take home.

Run by brothers Lawrence and David Harris, and ice cream expert Tony Grech, Harry & Larry's has been crafting award-winning artisan ice cream for the Australian retail and gourmet market since 1994, culminating in the launch of their new business; Harry's Ice Cream in 2012. 
The factory tour showed us how far the Harris family's frozen dessert operation had come since its inception back in 1994. Back then, the ice cream was made in small batches of 5 litres at a time, all mixed by hand and sold from a retail store.

Today, Harry's Ice Cream uses the latest technology in ice cream production and highest quality ingredients to create its award-winning frozen delights. 
With an expertise in developing complex dessert ideas into commercial flavours, Harry's understands that new product development is a continuous activity, with its production team, including specialist Product Developer, undertaking annual overseas travel to examine trends first hand. 

Harry's Ice Cream sources all of its cream, milk and sugar from local suppliers, as well as the majority of its specialty ingredients, including syrups and ripples where available.

Drawing inspiration from classic Australian desserts, Harry's Ice Cream offers a range of distinctive and iconic flavours: Pavlova; Sticky Date Pudding; and Raspberry Cheesecake.
Sticky Date Pudding

The delectable Sticky Date Pudding was our favourite Harry's Ice Cream flavour. The Sticky Date Pudding is deep in flavour complete with toffee ripples and fudge pieces, it was incredibly indulgent.

Raspberry Cheesecake


The Raspberry Cheesecake flavour possessed a light lemon tanginess and has buttery chunks of biscuit pieces sprinkled throughout. It is a well-balanced and beautiful ice cream.

Pavlova

We also tasted old-timer, Harry’s Pavlova which is a delicious vanilla ice cream with a tart passionfruit ripple and crushed meringue pieces. The texture of this ice cream is wonderfully smooth.

The following were the 6 flavour requests: 
  • Pistachio, Honey & Rose water by Food Made With Love;
  • White Chocolate, Mars Bars, Hazelnut & Peanut Butter by Never Too Sweet;
  • Caramel Chocolate & Biscuit Bits by Melbourne Girl;
  • Coconut Cheesecake with Biscuit Bits by Gastrology;
  • Carrot Cake with Cream Cheese by My Poppet's Window; and
  • White Chocolate & Berries by Six Inch Heel.
We were provided with some hints and tips about how ice cream is judged by international ice cream judges and the competition for the best flavour request was on. 
Points were given based on flavour & aroma; texture & body; and presentation.
And the well-deserving winner was... 
 Congratulations Food Made With Love on that delicious 'Pistachio, Honey & Rose water' ice cream! 
It was a wonderful time had by all. Thanks to Harry's we now have tubs of Sticky Date Pudding, Pavlova and Raspberry Cheesecake ice cream on top of our very own Coconut Cheesecake ice cream as a dessert option at our Christmas table!

Over forty years ago, long before the days of cult coffee culture, Coffee MIO founders Mario Berra and his brother Frank had the simple idea of creating the perfect cup of Italian Espresso coffee. Gastrology bloggers were privileged to be invited by Coffee MIO to trace the delicious journey of the Coffee MIO coffee bean.
Upon arriving at the Coffee MIO factory in Thornbury, we were warmly greeted by Lorraine Berra, “Coffee MIO means 'my coffee' in Italian. And that is how we produce our coffee – the Italian way,” she says.

We then met with Frank Berra, Co-Managing Director of Coffee MIO (holder of the prestigious official ʻEspresso Coffee Tastersʼ accreditation with the Istituto Internazionale Assaggiatori Caffe) who took us on a behind the scenes tour of the factory, where beans sourced from the world's best growing regions are blended and roasted. 
Despite supplying over 1200 clients with coffee Australia wide and servicing a rapidly expanding overseas market, Coffee MIO remains a brand that has upheld its Italian essence. Frank explained that Coffee MIO use at least 5 varieties of beans to produce their Italian style coffee blends. Paying homage to Italian coffee heritage, the use of robusta beans is imperative in producing a traditional Italian espresso blend as it provides a full-bodied taste and a better crema. 
We started right at the beginning, where quality green coffee beans from locations such as Brazil, Kenya, Colombia, Costa Rica, Jamaica and the Ivory Coast are measured and prepared to precisely blended. Finely calibrated machinery is used to ensure consistency in every coffee blend. The next step in the process is the roasting of the green coffee beans. 

During roasting, the coffee beans change both physically and chemically. The green beans expand and change colour as aromatic oils and acids develop. The roasting process plays a dramatic role in determining the coffee's eventual aroma and flavour. The roasted beans are then graded using a process known as spectroscopy to accurately measure the coffee's degree of roast and ensure excellent flavour development. 
The A grade quality espresso coffee blends are then ready to be packaged. During the roasting process some of the natural sugars in the bean are transformed into CO2 gas. After roasting, the coffee continues to “degas”, emitting CO2 which helps to protect the delicate flavour and aroma of the coffee. 

As fresh roasted coffee reaches its peak flavour and aroma approximately 24 hours after resting, Coffee MIO rests it’s freshly roasted beans in large containers that only allow air to flow out but not in, thereby preventing any deterioration in the flavour of the beans. This resting period allows excess CO2 to dissipate and permits the coffee bean chemistry to stabilise. 

Once roasted, coffee beans must be stored properly to preserve the fresh taste of the bean - air, moisture, heat, and light are all damaging to coffee beans. 
Coffee MIO’s roasted coffee is vacuum packed in packaging which contains a one-way valve. This valve allows gases to escape the packaging but prevents air from entering, thereby preserving the freshness of the bean. 
As a result of manufacturing and producing true Italian espresso coffee, Coffee MIO are the sole Australasian agents for the famous Gaggia Professional Line espresso machines which run in harmony with GAGGIA Espresso machines and, of course, create superb cups of coffee.

Nearly fifty years on, Coffee MIO continues to freshly roast blends of Arabica and Robusta coffee beans for Italian espresso machines. The resulting Coffee MIO cup is beautifully nuanced, perfectly balance, powerful and has a rich crema. 
Speaking with Frank and Lorraine, their commitment, passion and knowledge about coffee is obvious. They explain that their style of roasting is ʻin simpatiaʼ with ʻmade-in-Italyʼ espresso coffee machines. The result is Italian espresso coffee that has stood the tests of time, fashions, trends and fads.

Chatime is the world's largest fresh tea outlet and is rapidly building up a strong presence in Melbourne.
Gastrology was taken behind the scenes on a tea tasting tour courtesy of Chatime. Our wonderful and extremely knowledgeable host Zachary (Chatime's regional manager) guided us on our tea tasting journey through the Chatime menu.

Chatime's menu is expansive, boasting an array of hot and cold (mainly tea based) beverages, ensuring that there is a drink to suit all tastes. The list of best-selling drinks can be a very helpful guide when ordering, given the sheer number of drinks on offer.
The variety of teas is impressive, including assam black tea, premium black tea, oolong tea, roasted tea, jasmine green tea and brown rice green tea. All of the teas have unique characteristics and flavour profiles.

Chatime's main focus is bubble tea - a sweet, milk tea drink containing chewy tapioca "pearls" (the bubbles). Whilst bubble tea originated in Asia, its popularity (and deliciously addictive flavour) has seen it spread throughout the world.

What differentiates Chatime from other bubble tea outlets is the use of high quality, fresh ingredients such as fresh Taiwanese tea leaves and real, not powdered, milk. Chatime also allows you to customise your drink by adjusting the level of sweetness and quantity of ice.
We saw firsthand the state of the art technology and brewing techniques Chatime utilises to ensure that each specific variety of tea is brewed at the perfect temperature, and the carefully refined processes involved in creating Chatime's signature drinks.
One drink we found particularly interesting and unique was the tea espresso. Brewed in a similar method to a traditional coffee espresso (albeit with tea leaves instead of ground coffee), the tea espressos are strong and rich allowing you to fully appreciate the complex flavours of the specific tea chosen.

We were also surprised at the excellent quality of the coffee smoothie, given Chatime's self-confessed emphasis on tea. For true coffee lovers, we recommend paying an extra 50 cents to get a second shot of espresso in the coffee smoothie.

The Gastrology team have been fans of Chatime for many years. Given how delicious and refreshing Chatime's beverages are, it is not surprising that they are going from strength to strength in Australia and around the world.
