Prince Dining Room

An exciting chapter has been added to the long and storied history of The Prince, with Prince Dining Room welcoming an elevated dining experience and a completely new menu.

With the history of the famed Circa deep within the venue’s veins, the original Prince Dining Room which opened in 2018 under the Ryan Hospitality Group, sought to bring St Kilda a completely juxtaposed offering to the hatted restaurant, which was paired back, casual dining with a Mediterranean twist. Now, in 2023, the airy second-level restaurant is leaning back into its roots with an overhauled, elevated and refined dining experience.

Located on the second level up top of the marble staircase, diners are welcomed into the space by bay views, intimate seating booths and art deco styling in a nod to the building's illustrious history. The man behind the menu is The Prince’s Executive Chef, Dan Cooper. Having cut his teeth in some of Australia’s leading kitchens including Aria and Circa, Cooper is now leading his own team in the Prince Dining Room kitchen, crafting dishes that celebrate premium, fresh produce with refined flavours and restrained elegance, mostly cooked over fire.

The new Prince Dining Room menu has seen Cooper craft each dish with intention, applying sophisticated techniques while allowing the produce to be the focus of every plate. Setting the tone with a series of produce-forward dishes, guests can expect fresh oysters with lemon and shallots, beef tartare with gruyere puff, Southern calamari with red pepper and spiced almond, and Sea Bream tartare with apple cucumber, fig oil and nori,to whet their appetite, before moving on to the likes of coal roasted beetroot, Market fish fillet served with clams, fennel and luxurious Nduja butter as well as perfectly cooked Tasmanian lamb rump with smoked eggplant and tahini.

The new iteration of Prince Dining Room is also paving the way for a dedicated cocktail bar, appropriately named, The Bar at Prince Dining Room. Led by Ryan Hospitality Group’s Group Beverage Manager and cocktail connoisseur, Paul Beresford, The Bar at Prince Dining Room is bringing the venue’s food and drink philosophy to life with every sip.
