Anchor: Christian McCabe and Daniel Wilson help beautiful milk take flight

There’s a saying that ‘milk is milk’, something to have on cereal or in tea and coffee, but not to be savoured and enjoyed.

A collaboration between two of Australia’s foremost gastronomic identities is set to change that. Christian McCabe of The Town Mouse and Embla, and Daniel Wilson of Huxtable, have joined forces to redefine Australia’s perception of milk during the launch of Australia’s first finely filtered milk, Anchor.

Gastrology recently attended the launch of Anchor Milk at Milk The Cow in Carlton where we experienced milk like never before, presented by Christian McCabe and Daniel Wilson in a five course ‘flight’ menu.

Applying their culinary expertise, McCabe and Wilson challenged the notion that milk is something to be enjoyed only with cake and cookies through the creation of the Anchor Milk flight menu, which comprised five unconventional milk pairings – from oysters, to kale and pork belly. 

McCabe and Wilson wanted to explore how milk's complex make up of fats, lactose, protein and umami (which is what makes it so delicious) could be accentuated or framed to complement less obvious foods, in a gastronomic way.

The result was a very grown up milk flight that accentuated the natural components of milk through five different delectable courses (all matched with Anchor Milk either in its purest form or infused) to reignite our imagination about this household staple. 

An absolute highlight was the milk roasted pork belly with warm spices, cauliflower and watercress. The pork belly was incredibly tender courtesy of having been gently cooked in Anchor Milk and spices. The accompanying cauliflower puree was beautifully luxurious and again, had been cooked in Anchor Milk. It was a beautiful dish.

Anchor is definitely a step-up in taste from regular milk. The milk's medium structure boasts just the perfect level of richness and possesses a really clean and refreshing finish with distinctly no after-taste.
