Every Saturday from 11am to 3pm, BANG is transforming the mid-morning meal into an all-out flavour fest. The brunch format? Choose a three-course menu from their stunning Thai inspired menu by Executive Chef Justin Dingle-Garciyya, designed to deliver the punchy flavours of Thai street food with a playful, brunch-appropriate twist. Think bold, bright, zesty dishes that pack heat, texture, and the kind of umami punch that makes you crave more.
Paired perfectly with a bottle of Chandon Garden Spritz for two, this is no ordinary brunch—it’s a full sensory experience.
Start strong with a mix of vibrant entrees designed to whet your appetite. There are prawn har gao breakfast dumplings, tender and juicy with just the right amount of bounce; lemongrass chicken hibachi skewers with a zingy sambal oelek; and crispy Port Phillip calamari dressed in a refreshing yuzu and coriander number that’ll have your palate dancing.
Then, it’s onto mains that deliver comfort with a twist. Miso and garlic salmon, edamame puree, ginger soy dressing bursts with umami. Drunken noodles come laced with turmeric chicken, shrimp, crispy shallots, chilli and ginger—big, bold and unashamedly saucy.
