/di Mare restaurant at Karma Kandara has been a fixture among the island’s shortlist of world class fine dining restaurants for well over a decade, continuing to win awards and industry accolades.
That’s down to celebrated Chef Joseph Antinoshek who has taken the restaurant’s long established Mediterranean meets pan-Pacific template and run with it, introducing a host of locally-inspired flavours.
Our top picks from the menu include the grilled octopus served with hearts of palm and heady patai braised in citrus extra virgin and ink aioli topped with crispy tapioca coral crackers. The dish of Steamed Grouper in banana leaf is equally delicious. Think perfectly cooked fish served with local clams, mango sambal in a fragrant lemongrass river prawn broth. Just yum!
And of course the taste sensations take place in one of the most spectacular locations in southeast Asia. Perched on the edge of a limestone cliff 80 meters above the Indian Ocean, the pavilion restaurant is covered by a huge white canopy like a sail; diners enjoy uninterrupted views over the sparkling Indian Ocean while they are regaled by Joseph’s inspired dishes accompanied by wines from one of the best-stocked cellars in the country.
