Cooking With Fire | Firebird x Prince Dining Room

Last night Executive Chef of Firebird, Anthony Choi, and Prince Dining Room alumni, Dan Hawkins took it behind the grill at Prince Dining Room.

With a custom-built chargrill and woodfire oven taking pride of place in the iconic St Kilda venue, it only made sense to invite grill-driven Vietnamese French powerhouse Firebird for a one-night only, fire-fuelled event.

The menu consisted of an array of snacks and dishes straight from the fire. The flavours and dishes represented a deep understanding of the unique palate and textures of Vietnam with a Mediterranean twist, all intensified over charcoal.

The flames continued behind the bar, with drinks that featured smokey spirits and burnt cocktail garnishes. We loved the all Australian beverage pairing which went wonderfully with the bespoke four course menu.
