Good Friday at Cocobei

Cocobei curated a four-course seafood degustation, a symphony of tastes meticulously crafted to celebrate the Easter weekend. Drawing upon over two decades of industry expertise, Cocobei seamlessly blends Australian, French, Mediterranean, and Asian influences, creating a menu that reflects the vibrancy of Melbourne's diverse culinary landscape.

Head Chef Martin Sun, guided by his Chinese heritage, infuses traditional cooking techniques and aromatic spices into each dish, adding a distinctive touch to the degustation.

The degustation commenced with a Gazpacho featuring an Almond Cracker, Avocado Creme, and Torched Prosciutto—a refreshing prelude that awakened the palate. The journey continued with a Confit Salmon adorned with Watermelon Jerky, showcasing Chef Sun's innovative approach to seafood preparation. The meticulous 15-hour baking process followed by dehydration unveiled a depth of flavour that was both surprising and delightful. Complemented by passionfruit vinegar and finger lime, this dish achieved a harmonious balance of sweet, salty, and sour—a true testament to Chef Sun's mastery.

The pièce de résistance emerged in the form of Butter Poached Flounder with Prawn Ravioli, Bok Choy, and Seafood Bisque—a marriage of flavors and textures that danced on the tongue. Each element of the dish spoke of quality and precision, highlighting Cocobei's commitment to sourcing the finest ingredients, locally provided by Ocean Made Seafood.

As the culinary journey approached its conclusion, a Ganache Tart with Italian Meringue, Strawberries, and Vanilla Ice Cream graced the table—an indulgent finale that left a lingering sweetness on the palate, a fitting ode to Easter.

To elevate the dining experience, every guest was welcomed with a complimentary glass of Chandon Brut Champagne, adding a touch of sparkle to the holiday celebration.
