Hacienda
/Hacienda, located at Southgate in Melbourne, redefines Mexican dining with a contemporary twist, offering a culinary journey inspired by the vibrant flavors and trends of Mexico City. Helmed by Australian chef Ross McCombe, who spent seven years immersed in Mexico’s bustling culinary scene, the restaurant offers a fresh perspective on traditional Mexican cuisine, blending authenticity with innovative flair.
Chef McCombe's extensive experience in Mexico City has deeply influenced Hacienda's menu. Drawing inspiration from La Docena, one of Mexico City’s renowned raw bars, the dishes emphasize seafood and share plates. Highlights include crispy pork belly, perfectly poached fish, and house-made tostadas topped with seasonal ingredients. Other menu stars include clay-baked beetroot with cashew mole and meats served with complex peanut mole crafted from over 30 ingredients.
The tortillas, a centerpiece of the dining experience, are made fresh in-house through a traditional nixtamalization process, ensuring authenticity in every bite.
The bar at Hacienda showcases a rich collection of agave spirits from across Mexico, including tequila, mezcal, sotol, raicilla, and bacanora. Signature cocktails like the "Frida" blend creative ingredients such as sweet potato shrub and cocoa foam, reflecting the same innovation found in the food.
Designed by Ben Fretard, Hacienda features bold neon accents and Mexican folk sculptures that evoke the vibrant spirit of Mexico City while retaining a modern edge. Future plans include adding a raw bar and hosting tequila masterclasses, further enriching the dining experience.
