A wonderful amalgamation of breakfast delights, this dish boasts a salad of capsicum, coriander, cucumber, tomato and spring onion atop a crusty sourdough which has been generously spread with smoky and luscious baba ganoush. All topped off with 2 perfectly poached eggs.
