Nestled within the basement of the Standard Chartered Bank Building, this Michelin-starred restaurant blends heritage Cantonese cuisine with contemporary flair, all within a setting of sophisticated elegance. With its dramatic interiors, curated cocktails, and a menu that celebrates the finest ingredients, Mott 32 is a must-visit for those seeking an unforgettable culinary experience in the city.
During my visit, the meal began with the Soft Quail Egg Siu Mai, a luxurious interpretation of a dim sum classic. The delicate dumpling, filled with Iberico pork and crowned with a soft quail egg, was further enriched by the earthy aroma of black truffle—a bite-sized masterpiece that encapsulated Mott 32’s ability to refine tradition with modern indulgence.
Next came the Barbecue Iberico Pork, glazed with Yellow Mountain Honey. The pork, renowned for its marbling, was melt-in-your-mouth tender, its sweetness perfectly balanced by a whisper of smoky char.
Moving on to the mains, the Whole Crispy Abalone was a revelation. Typically enjoyed in braised preparations, the abalone here was transformed with a crisp, golden crust and seasoned with salt and pepper, creating a textural contrast that highlighted its natural brininess. The Signature Smoked Black Cod, on the other hand, was silky and delicately infused with a subtle smokiness, its flesh flaking apart with the lightest touch. A true Mott 32 signature, the black cod filets are covered in a light batter and fried to golden perfection, then tossed over in a tantalizing sauce and smoked with apple wood.
For those who appreciate exceptional beef, the Japanese Kobe Beef A5+ did not disappoint. Paired with grilled leeks and homemade black bean paste, the rich umami flavors were elevated by the interplay of sweetness and char, making each bite a testament to Mott 32’s expert execution.
To accompany these exquisite proteins, the Signature Lobster Fried Rice was a showstopper. Laden with succulent lobster, bursts of salmon roe, king oyster mushrooms, and edamame, it was indulgent yet perfectly balanced—each grain infused with wok hei, that coveted smoky essence imparted by the high flames of a master’s wok.
Dessert at Mott 32 is as much about theatre as it is about taste, and the Almond & Chocolate creation was a dream for any sweet tooth. However, it was the Oolong Tea Xiao Long Bao that stole the show. Arriving in a cloud of theatrical smoke, these delicate soup dumplings were infused with the fragrant notes of oolong tea, offering an innovative, almost whimsical take on the classic xiao long bao experience.
Mott 32 is more than just a restaurant—it is a celebration of Chinese cuisine at its finest. With its impeccable service, breathtaking interiors, and a menu that marries tradition with innovation, it is no surprise that this culinary gem has earned its Michelin star.
