To start we enjoyed a selection of antipasto to share. The selection of salumi was a display of superlative flavours comprising of a respectable assembly of San Daniele Prosciutto DOP, Parmigiana di Melanzane Capocollo - cured pork, Bresaola - air dried salted beef and crusty focaccia bread. The San Daniele Prosciutto DOP was in particular excellent – possessing a richness that had been further enhanced by the flavours of the intense curing salt mix.
For mains the Murray Valley 12 hour Slow Cooked Pork Belly was delightful. The slices of pork belly were stunning. The pork was moist on the underside and contained the perfect amount of unctuous fat, encased in a crisp outer crust of crackling. Each bite was gratifying. The delicious accompaniments of Rhubarb, apple, onion and ginger relish, sprouts and white balsamic sauce provided a delectable depth of flavour to the pork.
The pannacotta served with white chocolate an vanilla, strawberry, balsamic and pistachio praline concluded our evening on a sweet high. The pannacotta was silky smooth - just barely holding its shape, it was quivering on the plate. A simple traditional dessert that was well executed and thoroughly enjoyable.
