Nestled within Turin’s historic Piazza San Carlo, Scat_to is the latest culinary venture by the renowned Costardi brothers, Christian and Manuel. The restaurant’s name, meaning snapshot in Italian, reflects its deep connection to the art of photography, a theme that resonates throughout both its gastronomic offerings and contemporary design. The interior boasts a modern dining space with an open-view kitchen, allowing guests to witness the meticulous craftsmanship behind each dish.
During our recent visit, we indulged in the "Ritratto" degustation menu, a culinary journey showcasing the team’s diverse inspirations. The experience was elevated by meeting Christian Costardi himself, a true genius in the kitchen yet so refreshingly humble. Watching him engage with his team and diners alike, it was evident that his passion for food is matched only by his respect for the people who enjoy it. His approach to every dish is thoughtful and balanced, seamlessly weaving together the five fundamental tastes—sweet, sour, salty, bitter, and umami—while also considering texture at every step.
The meal began with an unforgettable “Oyster, Lard & Caviar”, an umami-laden masterpiece where the briny freshness of the oyster melded with the silkiness of lard and the luxurious pop of caviar. The next dish, “Crystal Ball”, was as much about texture as it was about taste—a delicate, glass-like sphere that shattered in the mouth, revealing a play of flavors that lingered beautifully.
A playful highlight was the “Octopus & Chorizo”, cheekily resembling Wilson, the volleyball from Cast Away. This dish was a marvel of contrasts—smoky and spicy chorizo against the tender, charred octopus.
Christian’s love for storytelling through food was evident in a lot of the dishes including the “Mole of Mole” and “Differently Tonnato”, dishes that paid homage to tradition while daring to reimagine them.
Next up, the “Caffè e Brioche”—a cheeky interpretation of an Italian breakfast, with coffee-infused elements and buttery brioche reimagined in a way that felt both nostalgic and innovative.
Meanwhile, “Vegetable Space” was a zesty, playful ode to vegetables, using pickles and acidity to brighten and surprise the palate.
The “Fisherman Risotto”, a signature of the Costardi brothers, arrived in its iconic signature tin can—a nod to the sea. Its creamy texture and deep seafood flavours demonstrated their mastery of risotto, a dish they have redefined over the years. Similarly, the “Lobster & Champagne Foam” was an exercise in luxury, where the delicate sweetness of lobster was enhanced by the effervescent lightness of the foam.
The smoked eel and carrot was yet another standout. The rich, smokey flavour of the eel complemented the natural sweetness of the carrots, creating a harmonious balance, leaving a lasting impression of both complexity and subtlety. It was a truly unique combination that showcased Scat_to's skillful approach to blending unexpected ingredients in a way that felt both innovative and comforting.
The final savoury duck course was a true showcase of Christian’s ability to extract the maximum flavour from every element.
Dessert was equally impressive, beginning with “Blueberry, Kefir & Lemon Balm”, a fresh and tangy composition that cleansed the palate. The final course, an American-inspired dessert, took familiar flavours and elevated them into a sophisticated finale.
Throughout the experience, Christian's presence was a reminder that true culinary artistry is not about ego but about harmony. Every dish at Scat_to reflected this philosophy—balanced in taste, refined in execution, and deeply connected to its story. The restaurant is not just a dining destination; it is a love letter to food, creativity, and the people who bring it to life.
