/Situated in Fraser Place in the heart of bustling Kuala Lumpur, Skillet is a breathtaking Modern European Restaurant with a twist alongside as an outstanding bar.
The restaurant interior seamlessly combines contemporary design with comfortable furnishings to create a relaxed ambience. The open kitchen adds theatre to the dining experience, allowing diners to glimpse the technical mastery within.
Under the capable hands of Chef Raymond Tham the restaurant is a well-oiled machine that continues to reach new heights in fine dining. The award winning menu captures the beauty of the Malaysian harvest using a ‘farm to plate’ philosophy from local suppliers combined with seasonal European ingredients. Tham graduated in Westminster Kingsway, London and his career boasts stints at the Wentworth Golf Club, Surrey UK as well as Fairmont Southampton, Bermuda before returning to his homeland Malaysia to be closer to his family.
In Malaysia Tham's passion for gastronomy continued to grow and was cultivated through his roles as a culinary lecturer at a local university and technical advisor in Barry Callebaut. This was further supported by a group of friends who loved to dine and travel around the world. Through these experiences, Tham realised there was a gap in the dining scene - a restaurant which celebrates European cuisine but reimagined… and Skillet was born.
5 years on and the eatery is truly the embodiment of reimagined European cuisine knocked on the head with Asian influences that boasts refinement within a slick ambience. We loved tasting our way through the dinner degustation. One paired with wine, the other with juice. Don’t let the casually named “juice” pairing fool you, it’s more like an extravagant mocktail pairing – perfect for the designated driver or with an aversion to alcohol.
To start – a duo of delightful amuse bouche commence the culinary journey. A melt in your mouth beetroot tart and a quirky take on the potato salad whet our appetites. To follow, a dish of lobster graced our presence. We loved the perfectly cooked lobster which went beautifully with crisp celery, apple and umami-laden seaweed Oil. It was a beautifully elegant and restrained dish that allowed the lobster’s natural sweetness to shine through.
An interesting take on the Pierogi was next. One of our favourite dishes we loved the al dente pastry casing stuffed with creamy pumpkin and laced with brown butter. The dumpling were delicately made and wonderfully flavoursome. The wine pairing for the dish was exceptional – 2016 Kuban Angels and Demons Cabernet Sauvignon from Краснода́р Russia. It was interestingly light bodied and aromatic and went well with the dish.
In the lead up to mains, a light dish of 150 Days Duck Prosciutto salad – dressed with 25 Year old Balsamic that Tham lovingly brought all the way from Italy was a welcomed sight. We loved that the dish utilised local duck meat which was known to be tough in such a clever way whilst highlighting the premium nature of the stunning balsamic vinegar. The juice pairing for this dish was exceptional – a gloriously aromatic mocktail made from earl grey kombucha and it even looked as pretty as a picture.
For mains the Beef Short-Ribs was a crowd pleaser. So tender it simply melted in our mouths courtesy of being marinated in coffee and lovingly slow cooked for hours.
Dessert time continued to impress with a duo of desserts. The first was a thoroughly modern plate of cream cheese foam topped with beetroot and prunes. The flavours simply worked! This was followed by a dessert aptly named "Textures of chocolate" - A chocolate lovers dream comprising of a chocolate sphere, chocolate and cocoa soil, white chocolate "pop-corn" and more liquid nitrogen.
When it comes to chocolate, Tham is an expert and it shows in the execution of the dish. Once a technical advisor for Barry Callebaut overseeing their European brands of chocolate Tham was also one of the judges for the World chocolate master selection in Taiwan. So it's really no surprise that this dessert was superb. Picture perfect in appearance and even more outstanding in taste.
